I absolutely adore pesto- it is something I crave when the winter comes around. While store bought pesto can help out in a pinch nothing tastes as incredible as homemade fresh pesto! It can be made on the fly and can be added to so many recipes, from chicken to pasta or pizza and even on your morning eggs.
If you haven’t made pesto before it is super easy and only requires a handful of ingredients. You will want to use the freshest basil you can find ( I grow my own in my garden) as it really does make a difference .
Pine nuts are my preference for pesto, however, so many variations of nuts can be used in pesto instead, like walnuts.
The parmesan cheese should also be fresh grated off the block if possible.
-2-3 cups of fresh basil (Be sure to take off the stems of the basil.)
-1-2 garlic cloves
-1/3 cup pine nuts
-1/2 cup fresh parmesan
-1/2c to 3/4 cup of olive oil
-This can be made in a food processor or magic bullet, which ever you have on hand.
-Add your basil, peeled garlic, pine nuts, cheese, salt and pepper to food processor.
-Give it a couple of pulses. You will get a course mixture.
-The next step is to add your olive oil. Simply turn on your food processor and add your olive oil in slowly. Once all of it is in give it a good process and Voila.
Note: Taste test and see if you may need to add a pinch of salt and pepper, depends on how salty your cheese is. Also adjust the consistency of the pesto by adding more olive oil if needed.
