Mini Carrot Loaves

Ingredients & Directions: 
– 1 Medium/Large Carrot
– 1/2 Cup Baking Oil
– Finely Grated Zest of one Orange (optional)
– 1 Ripe Banana
– 1 Cup Firmly Packed Brown Sugar

Step One: Preheat your oven to 350 degree celsius and line 8 mini loaf pans with baking paper or liners. Using the grating attachment on your food processor, grate the carrots and then switch the blade and add remaining ingredients. Pulse until combined.

-1/2 tsp Baking Powder
– 1/2 tsp Baking Soda
– 1 tsp Cinnamon
– Pinch of Salt
– 1 1/4 Cups Whole Wheat Flour

Step Two: Add the remaining ingredients to the processor and pulse. Scoop the dough into muffin tins and bake for about 30 minutes or until the tops bounce back when you touch them.

Finally: Cool these tasty treats. They are delicious on their own but for more flavour you can ice with cream cheese icing. Enjoy!
