All the Barrys love berries so I have to have the best Barry muffin recipe around!
INGREDIENTS
– 1.5 Cups Flour
– 3/4 Cups Sugar
– 2 tsp Baking Powder
– 1/2 tsp Lemon Zest
– 1 tsp Cinnamon
– 1/4 tsp Salt
– 1/2 cup Milk
– 1/2 cup Butter Melted
– 1 Large Egg
– 1.5 Cups Berries (blackberries, raspberries, blueberry or a mixture of all)
STRUESEL TOPPING:
– 1/2 Cup Brown Sugar
– 1/3 Cup Flour
– 1.5 tsp Lemon Zest
– 1/2 Cup Pecans Chopped and Toasted
– 2 Tbsp Butter
DIRECTIONS:
– Combine the flour, sugar, baking powder, lemon zest, cinnamon and salt.
– Mix those together and add the melted butter, milk, and eggs. Mix this until smooth.
– Fold in the berries.
– Use muffin paper liners or grease the muffin tins
– Fill the tins about 2/3 full and top with 1 Tbsp of topping
– Bake 350 celsius
– My oven takes 20 minutes to cook
