Pesto Roasted Tomatoes on Spelt Raisin Bread πŸŒ±πŸ…πŸ₯–
A simple dish made to look fancy. If you have company over or a guest to impress, try making this classy, flavourful, and fresh dish.

Recipe:
*Step 1: Take a pint of cherry tomatoes, add olive oil, pesto, salt & pepper and roast in the oven at 375 F until blistered.
*Step 2: Take ricotta cheese and mix in parmesan, fresh basil, and cracked pepper. Set aside.
*Step 3: Take your spelt bread and brown both sides on a pan with olive oil until crispy.
*Step 4: Spread the ricotta mix on the bread, add the tomatoes and finish it off with fresh fresh and drizzle with olive oil and toasted pistachios – voila!
