No Bake Blueberry Protein Bars

I’m a big lover of dates so any time I have a chance to add them to my homemade bars I will! I usually make these No Bake Blueberry Protein Bars for when I travel with my family. They’re SO easy to pack and are the perfect healthy snack ๐Ÿ˜‹

Recipe:
– 1 cup medjool dates
– 1/4 cup nut butter (I used almond)๐Ÿฅœ
– 2 tablespoons maple syrup, you can sub with honey or agaveย ๐Ÿ
– 1.5 tablespoons melted coconut oil
– 2 teaspoons coconut waterย ๐Ÿฅฅ
– 1/4 cup almonds
– 1/2 cup gluten free oat flour
– 1/2 cup dried blueberries
– 1/2 cup unflavoured protein

Directions:
In a food processor pulse dates until smooth, add nut butter, syrup and coconut oil. Then transfer to another bowl, add oats, protein and coconut water then fold in the nuts and blueberries. Press into a pan and refrigerate until they harden. Finally, cut and enjoy!
