Coconut, Almond, Gluten Free Porridge

My morning ritual: A warm bowl of oatmeal and sipping on a bold coffee while reading the newspaper next to my husband šŸ™‚ I often spruce up my oatmeal with different flavours to make every morning special. This is my coconut, almond, porridge.

– 1/2 C gluten free oats šŸŒ¾
– 300 mls almond milk šŸ„›
– 1 tbsp almond butter (or cashew butter)šŸ„œ
– 1 mashed ripe banana šŸŒ
– 3/4 C red fruit of choice (I used pomegranate) šŸ’šŸ“

Directions: Soak the oats in almond milk for 10 minutes. Then add your coconut, banana and nut butter. Let it boil for 4-5 minutes or until puffy. Pour the oats into your bowl and finish it off with your favourite toppings! If you prefer yours a little sweeter, add a splash of pure maple syrup!
